Cilantro Lime Chicken

Ingredients:

3-4 Chicken Breast

1-2 Bushels Cilantro

3-4 Limes Juice

1 TBS Minced Garlic

6oz Light Beer

 

Directions:

In food processor, blend cilantro, lime juice and garlic until blended well

Add 6oz of light beer

I like to cut my chicken breast into strips (gets more flavor) but you can also leave it as whole chicken breast.

Put chicken and marinade into ziplock bag and marinate for at least a hour.

Grill or cook in pan

 

 

 

 

Mediterranean Spaghetti Squash

 

Ingredients:​​

1/2 cup garbanzo beans (drained and rinsed)

1/2 cup cherry tomatoes (cut in half)

1/4 cup chopped red onions

2oz Feta Cheese

 

 

Directions:

Cut spaghetti squash in half, take out all seeds, place on baking sheet cut side down, bake @ 350 for 45 minutes

Once squash is cool, shredded with fork.

I used about 200 grams of squash

Mix all ingredients in with squash

 

 

 

 

 

 

 

 

 

Turkey Chili

 

Ingredients:

​​1 pound extra lean ground turkey

1 Zucchini

1 can black beans drained and rinsed

1 can kidney beans drained and rinsed

1 can diced tomatoes

1 can tomato sauce

1 can El pato sauce

1 cup of water

1 tbsp chili powder

1 tbsp garlic powder

Optional: I add a little tapito sauce

 

Directions:

Brown ground turkey until fully cooked

Sauce zucchini until brown

Add cooked turkey, zucchini and all the rest of the ingredients to large pot

Slowly simmer for about a hour.

***This pairs well with kodiak corn bread***

 

 

 

 

 

 

 

Cilantro Turkey Burger 

 

Ingredients:

1-2lbs of lean ground turkey (double recipe if using 2lbs)
Handful of Cilantro

Red Onions

1 egg per pound of ground turkey

28 grams of feta cheese

 

 

Directions:

Chop cilantro and red onion

Mix everything together and divide into 6 patties (About 3.5-4oz each)

Put on cookie sheet and refrigerate for a hour

Grill or cook them in a pan

 

 

 

 

 

 

Air Fryer Chicken Tenders

 

Ingredients:

1-2lbs of chicken tenders

1 cup plank bread crumbs

1/4 cup flour

1 egg

2 tbsp milk

2 tsp paprika

2 tsp garlic powder

Salt & pepper

 

Directions:

Mix egg, milk, salt, pepper in one bowl

Mix flour, 1 tsp paprika, 1 tsp garlic powder, in another bowl

Mix planko crumbs, 1 tsp paprika, 1 tsp garlic powder in another bowl

Coat chicken in flour mix, than egg mixture, then planko mix

Spray air fryer with non-stick cooking spray, add chicken in 1 layer

Cook @ 370 for 14 minutes, turning half way through

 

 

 

 

 

 

BBQ Chicken Pizza 

Ingredients:

​Flatbread or can use the bread stick recipe

1 tbsp BBQ sauce

1-2 tbsp Chopped cilantro

1 tbsp Chopped red onions

About 1.5 oz of chopped chicken breast

1/4 cup low fat shredded mozzarella cheese

 

 

Directions:

Spread BBQ sauce on flatbread

Top with cilantro, onion, chopped chicken

Add cheese 

Bake @375 for about 8 minutes

Last 2 minutes turn broiler on high to crisp
